My Story
Hi, I’m Maribel, a Registered Dietitian specializing in digestive health and sustainable nutrition. My journey with health and nutrition began in my mid-twenties, when I realized I needed to adopt a healthier lifestyle. At that age, I was unusually tired, and did not have healthy eating habits. I grew up eating a diet that included lots of fried and unhealthy foods. As a college student, I began eating what was most affordable which included a lot of processed foods. Consequently, I was anemic. This led me to change my nutritional lifestyle.
I also was suffering abdominal cramping, bloating, and pain. I had constipation and felt nauseous daily. After a long year of several exams to identify the problem, I was diagnosed with Irritable Bowel Syndrome (IBS). More frustration set in because I did not know the cause or any possible cures. After persistent health complications, I became determined to improve my health.
I met a wonderful Nutrition and Fitness Coach that guided me in learning healthy eating habits and exercise. This prompted me to pursue learning more about Health & Fitness and really make changes in my diet. Although I began to feel better and some of the symptoms were reduced, I still experienced abdominal bloating everyday and constipation for several years following.
Almost 7 years later, I learned that my abdominal distress was not caused by IBS, but by a strong intolerance to gluten, even though I did NOT test positive for Celiac Disease. Through careful experimentation, I confirmed that my abdominal problems were due to having a strong intolerance to certain foods. I made more changes to my diet and now I eat lots of fresh vegetables, fruits, whole grains, good fats and quality proteins. I became captivated with eating whole foods that are loaded with good nutrition.
As a result of making these changes, I overcame the day to day crippling symptoms that I experienced. It is amazing to be symptom free! I now have more energy, mental alertness, improved sleep, and greater over-all wellness that has led to a stronger sense of confidence and self-esteem. Most importantly, it has allowed me to fully enjoy life while sharing my passion for nutrition with others.
